Peel the potatoes, and place in a pot. Cover with water, and boil just until become tender.
Drain the potatoes and mash it to obtain purée.Let cool.
Add remaining ingredients (egg, garlic, onion, parsley, spices) and mix. Leaving aside a few minutes for the potato absorbs the liquid.
Shape the potato mixture into cakes about 3" in diameter, Dip the potato patties in flour and fry them until it becomes golden brown and use paper towel to absorb the excess oil.
Serve the Maakouda immediately
