Ingredients for 13-14 pancakes
For the dough :
1 tspn yeast
1 tspn salt
1 tspn sugar
1 cup warm milk
40 g butter
For the stuffing :
250 g minced meat of your choice
1 large onion
Peppers (green, red, yellow)
1 small bunch of coriander
Spices: 1 tsp. coffee bell peppers, 1 tsp cumin ½ tsp. freshly ground black pepper, salt)
2 tbspn olive oil
Mix all the ingredients for the dough in the bowl of a food processor or by hand, knead until smooth and not sticky dough.
Cover and let stand 45 minutes.
in a pan heat oil, add onion and stir until translucent, add the crumbled meat and stir few minutes on the heat and add the chopped pepper into small cubes.
Add spices and cook stiring occasionally. By the end of cooking, add the chopped fresh coriander.
Remove from heat and let cool.
Divide dough into 14 smaller pieces, spread them out thinly sprinkling the work plan with flour so it does not stick. The dough should be thin. Spoon stuffing on each half circle, with cheese, close and cook on a hot pan 6 to 7 minutes on each side without adding fat.
